This is my Super Cool friend Amy's bestest best best pie ever!
She said I could share the recipe with you!
Prep Time: 1 hour
Cooking Time 1 hr. 15 min. to 1 1/2 hrs.
1 Prepared 9" pie crust (use your favorite one)
Caramel Streusel Topping
8 Tbs. butter (semi-melted)
1 1/2 cups unbleached all purpose flour
1/3 cup firmly packed dark brown sugar
1/2 toffee bits
Filling
2 1/2 lbs. Granny Smith or Golden Delicious apples (7-8 apples)
3/4 cup toffee bits
1/3 sugar
1 Tbs. cornstarch
1/8 tsp. salt
2 Tbs. butter
2. Mix butter, flour, sugar, and toffee bits in a bowl. Form into two balls and refrigerate.
3. Peel, core and slice apples. Combine apples with toffee bits, sugar, cornstarch, and salt. Pour filling into pie crust and dot with butter. Break streusel topping over the top of apples.
4. Bake 20-30 minutes until top is golden and toasty looking. Loosely cover pie with foil with a quarter size hole in the middle. Bake 1 hour until bubbly.
